ReplyDeletecookinggal, do you have a recipe of black eyed peas and can you tell us why people like to eat them on New Years Day? (or is it eve?) Thanks!
ReplyDeleteBlack eyed peas are a sign of luck. They are eaten on new years eve to put a good start on the new year especially in the new year. As for a recipe I'll experiment with some possible ideas and get back to you soon!

I will share a recipe with you that is easy and delicious. I came up with this one night, spurred by my husband's remark that one thing his ex-wife had "over" me was her way with rice. I don't have the patience to cook it normally. And I've had lots of rice faux pas. But this worked.
ReplyDeleteBuy Whole Foods' frozen brown rice. (It's already cooked and brown is healthier than white.)
Sautee' sliced mushrooms or zucchini or another vegetable that turns soft such as onions in about 2 TB Earth Balance margarine or some sort of butter and 2 TB olive oil or olive and canola mix.
Add 2-3 TB no-chicken broth or chicken broth or beef broth or white wine or a combo. No white wine for 11 year olds please!
When vegetables are soft and a lightly browned at the edges (a few minutes), add about one and half cups of the frozen rice. Cover, poke at rice a bit to break up frozen chunks (not in that order).
Keep an eye on it for about five mins; when rice is warmed through add 4 TB or so grated parmesan or other salty hard cheese (shredded or grated). And my husband even liked it!
I call it Faux Risottaux.. play on words
